A sour taste can overpower the intended flavor of the formula with many acids. pHase® is a dry granular acid (NaHSO4) that offers a clean acid taste without fruit or vinegar notes. The result is a product with a bright, clean aftertaste that creates new opportunities for flavor enhancement and preservation.
Multiple Benefits of pHase
- Improve stability, texture and shelf life. pHase satisfies pH control, buffering and flavor enhancement needs. It can also be useful when converting from retort to hot fill to improve texture, color and retain nutrition.
- Modulate sodium and sweetener use. pHase enhances the flavor of salt allowing for sodium reduction and can also reduce sweetener use by 5 to 15% – all at a low addition rate.
- Safely boost flavor and appearance.A low sour intensity delivers a clean, smooth taste for many applications. pHase can also reduce acrylamide formation to manage browning.

A Sensory Spectrum study evaluated the sour intensity of common acidifiers in water showed that pHase (SAS – sodium acid sulfate) had the lowest sour intensity of all food-grade acids – even at a pH of 3.0 – meaning less product would be required to overcome any sour flavors.
