pHase®

is a “natural” food acid with the unique ability to lower pH without generating a sour taste. This characteristic opens the door to new and innovative products.

Low Fat / Lite Products:

pHase® creates natural “Low-Fat” or “Lite” products that taste similar to their full-calorie counterparts. “Low-fat” and “Lite” products such as salad dressings, sauces or syrups typically reduce the caloric content by replacing all or part of the oil or sugar with water. The higher water content increases the water activity (Aw), which increases the potential for microbial growth. Therefore reduced-calorie products require a lower pH when compared to their full-calorie counterparts. Increasing the formulation's acid content with conventional acidulants typically results in unacceptable sour taste. By reducing the pH with pHase®, the microbial stability is maintained without altering the taste.

Sustainability / Reduce Carbon Footprint:

pHase® can reduce the time and temperature required in the thermal processes by lowering the pH without affecting the flavor. Thermal processing such as retort or pasteurization is energy intensive and changes the flavor, texture, and color of food. Research from the National Food Laboratories indicates that pHase® can reduce the energy requirements of the process by up to 90%.

Sodium Reduction:

pHase® is a natural acid that significantly enhances the flavor of salt. It lowers pH and enhances saltiness without a sour taste. Research conducted at the Guelph Food Technology Center indicates that pHase® can reduce the sodium content of foods by 40% with similar saltiness as controls.

Sweetener Reduction

Tests conducted by Sensory Spectrum indicate that pHase® can reduce the sweetener content by up to 15% with no reduction in sweetness. Sweet and sour flavors need to be balanced. pHase® is less sour therefore less sweetener is required to balance the taste.

Cost Reduction

pHase®has a low addition rate and low cost. It can be blended with other acidulants to significantly reduce cost.
